Cliff (blue fins), diving up those crawfish, opening day.
  We were out catching lobsters the other day and I had the chance to quiz Cliff on his favorite lobster secrets, I thought I'd share his secrets with you...

Question: What makes for a great lobster dinner?

Cliffs' answer:  Well, freshness is key, and that takes a lot. You will definetely need a boat, and fuel, and at least a snorkel, mask and fins. Gloves are optional, but those lobsters will shred your hands without them (causing worries about sharks!).  You will also need a fishing liscense,
with the lobster stamp, and one of those lobster measuring devices, because if your lobster is too short, it can cost you a lot of money. Don't forget the dive flag, you do not want to be mowed down by a boat that does not see you. You also need a nice day, if the water is stirred up you can't see the lobsters.  Those lobsters are quick when they want to be, so it is handy to also have a net, it increases your chances of catching one.
   I guess all together you probably need to forget all of the above and come on down to the CRACK'D CONCH and buy one of ours, it is considerably less expensive, and ours are as fresh as any you will catch
as I purchase them alive, and I do not cook them until you order them.
although if the weather is real rough, the lobster fishermen do not go out,and I will not buy the frozen lobsters,so we sometimes run out.

Question: Sounds like you could save people a lot of money,time and trouble,  but I was looking for you secrets about cooking great lobster dinners.
